Required products :

  • 1 1/2 teaspoons salt
  • 1/2 teaspoon finely grated lemon peel
  • 3 thinly sliced ​​garlic cloves
  • 3 tablespoons chopped fresh basil
  • 1 tablespoon fresh oregano
  • 1 tablespoon chopped thyme
  • 4 tablespoons olive oil
  • 1 kg of shrimp, cleaned

for the sauce:

  • 1 tablespoon olive oil
  • the juice of half a lemon
  • 1/2 teaspoon hot pepper flakes
  • 1 pinch of hot red pepper
  • salt and pepper to taste
  • lemon for serving

Method of preparation :

Put the lemon peel, salt and 3 cloves of garlic in a mortar and crush until a paste consistency is obtained. Add the basil, parsley, oregano and thyme and continue to grind until the mixture is coarse - about 5 minutes.

Add 1 tablespoon of olive oil to the herbal mixture and stir for 1 minute. Add the remaining olive oil and stir again to obtain a smooth mixture.

Put the shrimps in a bowl and add 2/3 of the sauce with spices. Stir, transfer to a zippered bag and leave to simmer in the refrigerator for 2-3 hours. Pour the remaining sauce into a bowl under a lid and also store in the cold.

Heat the grill and grease it.

String the shrimp on skewers and bake for 2-3 minutes on each side until pink.

Put them in a serving dish and add more of the herbal mixture on top.

Combine all the sauce products and pour over the shrimp. Serve with lemon slices.
