Method of preparation :
Season the fish, grease it and bake on both sides (use a grill), keeping the inside raw and juicy.
Make the sauce. Melt the butter, add to it the juice of one lemon (freshly squeezed), capers, cut into thin slices of tomato, on which you have previously removed the skin. Add salt.
Arrange strips of peeled cucumber in a plate suitable for serving the fillet. Put the fish on top of the vegetables, spread the sauce around it and decorate the dish with arugula leaves.
