Required products :
1 zucchini (about 300 grams)
1 eggplant
2 small red tomatoes
2 small yellow tomatoes
150 grams of cheese
a few leaves of fresh basil
For the dressing:
olive oil
white wine vinegar
left
freshly ground black pepper
1/2 teaspoon Provencal spices
Method of preparation :
Wash the vegetables. Cut the zucchini and eggplant into thin circles. Rub the aubergines with salt and leave for a few minutes, then wash with water and dry with a paper towel.
Heat the grill, apply a thin layer of olive oil with a brush and fry the zucchini and eggplant in succession until the characteristic streaks appear (about 2-3 minutes on each side).
Wash the tomatoes and cut into pieces.
Prepare the dressing by mixing in a small jar olive oil, white wine vinegar, salt, pepper and Provencal spices. Determine the quantities according to your taste and preferences. Close the jar tightly and shake.
Take a suitable plate and arrange zucchini, eggplant, tomato slices in it, crush the cheese on top, put a few basil leaves. Season with dressing and serve.
