Required products :

  • 100 milliliters of water
  • 100 milliliters of fresh milk
  • 110 grams of butter
  • 150 grams of wheat flour
  • 2 eggs
  • 100 grams of yellow cheese
  • 1 teaspoon grated nutmeg
  • pinch of salt

 

For the sauce:

  • 4 tablespoons olive oil
  • 4 cloves garlic
  • parsley / dill

 

Method of preparation :

Mix the milk, water, salt and diced butter in a saucepan.

 

Place the pan on the hob and let the mixture boil and melt the butter completely.

 

Immediately afterwards, pour in all the flour and stir without removing from the heat until smooth.

 

Keep stirring, the dough should begin to separate from the walls and bottom of the dish. Wait for it to cool for 1-2 minutes.

 

Grate the cheese.

 

Transfer the dough to a bowl and start beating with a mixer using the dough attachment. Add the eggs one at a time, stirring well after each.

 

You should get a smooth homogeneous dough without lumps.

 

You should add the grated yellow cheese and nutmeg. Stir well.

 

Cover the bottom of the pan with baking paper, scoop with a spoonful of dough and form small balls, which you arrange in the pan at a distance of about 3 cm from each other.

 

Bake in a preheated 200 degree oven for 20 minutes.

 

Meanwhile, make the sauce. Mix olive oil, crushed garlic and chopped parsley.

 

Coat the lizards with the sauce (use a brush) and serve.
