Transfer the sliced potatoes to a large baking tray lined with parchment paper. Drizzle with olive oil, spice mix and salt. Stir and bake at 220 degrees for 20-25 minutes, until the sweet potatoes are crispy and toasted.
Meanwhile, grind the salmon fillet in a food processor together with the soy sauce and sesame oil - work with the "pulse" option about 4-5 times to mix the ingredients and feel the fillet pieces. Finally add the finely chopped chives and stir.
Form into 4 meatballs and fry in sesame oil until golden - about 2 minutes per side.
Assemble the burger, place the meatball in the middle of a sliced bread, arrange a few thin slices of avocado and sprouts. Close with the other part of the bread and serve with the potatoes.
