Required products :

  • 120 grams of dried hot peppers
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin seeds
  • 3-4 cloves of garlic
  • 1 teaspoon salt (or to taste)
  • 2 tablespoons olive oil (+ more for storage)

Method of preparation :

 

Soak the dried peppers for 30 minutes in hot water.

 

While the peppers are soaking, heat a dry pan and roast the spices until they release their aroma.

 

Crush the spices in a mortar or grind them in a coffee grinder.

Strain the peppers, preserving their liquid.

 

Clean them of seeds and stalks (use gloves if desired).

 

Put the peppers, spices, salt and garlic in a food processor and grind (or crush in a mortar).

 

While grinding the products, add olive oil to the mixture, occasionally scraping the products from the walls of the robot's jug. If you want a more liquid paste, add some of the liquid in which the peppers were soaked.

The taste of Harissa pasta will be enriched in the coming days, but if you wish you can add more salt or other products of your choice, such as coriander, peppers, dried tomatoes, lemon, mint and others.
