How To Cook Hazelnut Cake With Chocolate And Espresso - Recipe

Necessary products:

 

  • 80 grams of crushed dark chocolate
  • 160 milliliters of hot espresso coffee
  • 35 grams of natural cocoa
  • 125 grams of fresh milk
  • 200 grams of flour
  • 10 grams of baking powder + 5 grams of baking soda
  • 1/4 teaspoon salt
  • 60 grams of soft butter
  • 225 grams of brown sugar
  • 1 tablespoon hazelnut essence
  • 2 eggs

 

for cream

 

  • 150 grams of dark chocolate
  • 120 grams of protein
  • 150 grams of powdered sugar
  • 200 grams of soft butter
  • 1/2 tablespoon instant coffee
  • 5 grams of vanilla powder
  • pinch of salt

 

for ganasha

 

  • 50 grams of dark chocolate
  • 75 milliliters of whipping cream
  • 10 grams of butter
  • chocolate bars for decoration

 

Method of preparation:

 

Melt the chocolate, add the coffee, cocoa, hazelnut essence. In another bowl, beat the eggs with the sugar, butter and milk. Combine the two mixtures, mix gently and add to the flour mixed with salt and leavening agents.

Pour the mixture into a greased and floured cake tin, preheat the oven to 180 degrees and bake the tops. Cool and cut them into three parts. Make the cream as follows: beat the egg whites with powdered sugar, add melted and cooled chocolate, butter, coffee, vanilla and a pinch of salt.

Beat until smooth and coat the tops with it. Put the rest in a syringe and set aside. To prepare the ganasha, melt the chocolate, cool and mix it with the cream and butter.

Beat with a mixer and glaze the top layer with the resulting mixture. Decorate with a syringe in shapes of your choice and sprinkle with chocolate bars. Cool, cut and serve the cake.
