Required products :

  • 150 grams of hazelnuts
  • 400 grams of prunes (this required amount without pits)
  • 4 eggs
  • 100 grams of sugar
  • 1 teaspoon baking powder
  • 1 tablespoon starch
  • 150 milliliters of high-fat confectionery cream (33-35%)
  • 100 milliliters of cognac


Method of preparation :

Clean the prunes from the stones, rinse the fruits themselves and drain the water. If they are too dry, scald them, then remove the stones and drain the liquid.

Drizzle them with cognac (if the dessert is to be consumed by children, do not use alcohol) and let them stay in it for a while. In case they are soaked for 8-9 hours, the cake will have a strong taste of the drink.

Pour the hazelnuts in a blender, add 1 tablespoon of sugar and grind.

In a bowl, mix the two eggs and the yolks of the other two. Beat them together with the remaining sugar. Then add the ground hazelnuts and beat again.

It's time for the starch - put a full tablespoon (with a tip), followed by thorough beating.

Pour the cream into the mixture, beat.

Next are the prunes, which you first drain from the cognac and cut into 2-3 pieces (if they are very large, the pieces can be 4-5).

And finally the ground hazelnuts. The dough should be liquid.

Transfer it to a cake pan. In this case, a round silicone with a width of 20 centimeters and a height of 7 centimeters was used. If you do not have silicone, grease the walls and bottom of the dish with oil and sprinkle with flour.

Bake the cake in a preheated oven for 40-50 minutes. Cut it when completely cooled.
