Eggplant is a vegetable that originated in India. It is very tasty and can be used for various purposes. Eggplant contains a lot of water and few calories. Its fibers help cleanse the body, lower cholesterol and blood sugar and eliminate toxins from the body. It is especially suitable for strengthening the body's defenses, as well as for the prevention of anemia, as it contains a large amount of magnesium and iron. Ingredients :
3 large aubergines
2 eggs
6 tablespoons breadcrumbs
10 grams ginger
1 clove garlic
1/2 teaspoon cumin powder
salt, pepper, olive oil and parsley to taste

Preparation :
Wash the aubergines thoroughly. Cut them in half and steam them until soft. In a separate bowl, pour the pre-chopped garlic and grated ginger. Stir until smooth.

In a separate bowl, pour the eggs and breadcrumbs. Beat until smooth. Form eggplant cakes with your hands. Roll them in eggs and breadcrumbs and arrange in a pan, the bottom of which you have previously lined with baking paper. Place them in a preheated 180 degree oven and bake until golden. Serve the eggplant burgers in a suitable dish and, if desired, garnish with rice, mashed potatoes or vegetables.
