Required products :

For skewers :

  • 1 piece of skinless chicken breast, sliced
  • 2 large mushrooms
  • 1 small zucchini, sliced
  • 1 small red pepper, chopped
  • 1 small red onion, chopped

For the marinade :

  • 35 grams of cranberry sauce
  • 1 tablespoon chopped ginger
  • 1 orange, peel / grated /
  • 2 tablespoons olive oil

For couscous :

  • 125 grams of couscous
  • 2 tablespoons chopped parsley
  • 1 small orange, juice and peel / grated /
  • 1 tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • sea ​​salt
  • pepper
  • fresh parsley for decoration

Method of preparation :

  • In a deep bowl, mix the marinade ingredients and mix well.
  • Add the chicken and vegetables and arrange them so that the marinade covers them.
  • Prepare 2 skewers, alternating meat with vegetables.
  • Bake them in a pan for about 30 minutes, turning them from time to time.
  • Wrap the finished skewers in cling film and let them rest while you cook the couscous.
  • Boil the couscous in a saucepan, pouring it with 225 milliliters of boiling water or enough to cover 3 centimeters.
  • Season with salt and pepper. Stir and cover with a towel.
  • Leave it for 20 minutes, then add parsley, juice and grated orange peel, vinegar and olive oil. Season to taste.
  • Divide the couscous into 2 plates and place the chicken skewers on top.
  • Serve them garnished with parsley and salad garnish.
