Required products :

  • 230 grams of tofu
  • 2-3 tablespoons vegetable oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1/2 teaspoon salt
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon agave syrup

Method of preparation :

  • Rinse the tofu under cold running water, drain, slice and place in a deep jar.
  • Add the oil, lemon juice and salt and puree until smooth.
  • Turn off the blender, return the mixture that has separated on the walls and strain again for about 1 minute.
  • Try the mayonnaise and season further, according to taste.
  • Transfer to an airtight jar and store in the refrigerator for up to 1 week.

Note!

You can add garlic, fresh herbs or seasonal spices of your choice .
