How To Cook Homemade Appetizer With Eggplant, Tomatoes, Garlic And Parsley - Recipe

Required products :

  • 6 medium-sized eggplants
  • 10-12 cloves of garlic, pressed or crushed
  • 8 large tomatoes, cut into quarters
  • 10 red peppers, peeled and finely chopped
  • 7 large carrots, grated or finely chopped
  • 3 medium-sized yellow onions, finely chopped
  • 1-2 jalapeno peppers, cleaned of seeds and finely chopped
  • 1 1/2 tablespoons salt
  • 1/3 teacup sugar
  • 1/4 teacup white vinegar
  • 1 bunch fresh parsley, finely chopped
  • oil

Method of preparation :

  • Wash the aubergines well, peel 3 of them and leave the rest with the peels.
  • Cut all into 5 cm pieces about 1.5 cm thick.
  • Transfer to a colander, sprinkle with 1 tablespoon of salt, and set aside.
  • Mix the tomatoes, 6 red peppers, garlic, parsley and jalapeno peppers in a blender or food processor. Puree.
  • Add sugar and vinegar, season with 1 1/2 tablespoons salt, and mix well.
  • Drain the aubergines and lightly dry them with kitchen paper.
  • Heat oil to a depth of about 2-3 centimeters in a large pan and fry the aubergines in batches.
  • Remove them on kitchen paper to drain the fat.
  • Pour about 3/4 cup of oil into a large saucepan over medium heat.
  • Saute onions for 3-4 minutes, stirring constantly.
  • Add the remaining red peppers and carrots, stir and cook for another 5-6 minutes.
  • Carefully add the mashed vegetable mixture and stir.
  • Once the appetite suppresses, reduce the heat and simmer on low heat for 9-10 minutes.
  • Add the fried aubergines, stir and cook for another 10 minutes. Try and season with salt if necessary.
  • Distribute the appetizer in jars, close tightly and preserve in boiling water or refrigerate for up to 3-4 weeks.
  • Serve with freshly baked bread and enjoy.
