How To Cook Homemade Bread With Sourdough - Recipe

Required products :

  • 150 grams of rye flour
  • 1 tablespoon yogurt
  • 450 grams of wheat flour
  • 1 teaspoon salt
  • 100 milliliters of fresh milk
  • 250 milliliters of water

 

Method of preparation :

The leaven

Mix half of the rye flour with 75 milliliters of water and a teaspoon of yogurt. Leave in a warm place for 24 hours, then stir and let the mixture stand for another day. Then pour the remaining rye flour into it, pour another 75 milliliters of water, stir and another 24 hours of patience follow.

Mix the resulting yeast with 100 milliliters of water and 2 tablespoons of flour (from the amount intended for the dough). Leave the combination warm overnight.


The dough

In the morning, add the sifted wheat flour, salt and pour the warm milk. Knead the dough, cover it with a towel and leave for three hours.

Then give the desired shape and place in a floured pan. Make a cross cut on the surface and place the bread in a preheated 230 degree oven. Fifteen minutes later, reduce to 200 degrees and bake for another 20 minutes.
