Required products :

500 grams of flour

365 milliliters of water

5 - 10 grams of yeast (pressed)

1.5 teaspoons salt

Method of preparation :

Prepare a deep bowl, dissolve the yeast and salt in warm water, sift the flour. If you use 5 grams of yeast, you will get bread with a milder taste; with 10 grams - the taste will not change much, but the dough will ferment faster.

Mix the products in the bowl and mix for about half a minute, without bringing the dough to homogeneity, you just need to mix the flour with the water. Cover the dish with foil and leave in a warm place for 2 hours.

Then remove the foil and start shaping the bread (the dough increases its volume 3-4 times). Use a deep bowl with thick walls, grease it and sprinkle with flour. Sprinkle the plate with flour, place the dough on it, the surface of which also sprinkle with flour. Press with the palm of your hand to flatten. You should shape the dough like a handkerchief, folding all the edges in half.

Thus prepared, place it in the prepared deep dish and close with a lid (you can use a cloth sprinkled with flour and nylon). Leave for half an hour to rise and increase its volume 2 times. During this time, turn on the oven to heat.

When the specified time has elapsed, put the dough to bake for 40-50 minutes. It is desirable to have steam. You can make one by placing a pot of boiling water on the bottom of the oven for 5-10 minutes. If your pan is deep and has a high lid, you can bake without steam, but with the lid closed and 20 minutes after the start of baking, remove it.

Remove the finished bread on a wire rack or on a folded towel. Cover with another and let it "rest" for a while.
