  • 700 grams of sifted flour

  • 2 eggs, broken
  • 2 tablespoons oil
  • 1 teaspoon baking soda
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup fresh milk, slightly warmed

  • 1 egg
  • 8 tablespoons melted butter
  • 1 teaspoon yogurt
  • 350 grams of shredded cheese

Steps for kneading and shaping the meat with cheese

  • Dissolve the yeast and sugar in the milk. Stir and let the mixture stand for 10 minutes.
  • In a large bowl, mix the flour, baking soda and salt.
In order not to get lumps when kneading the dough, water or milk is added to the flour, not the other way around. Otherwise the dough will be very difficult to knead.

 

  • Make a well in the middle and add the beaten eggs, oil and milk mixture.
  • Knead the dough for about 10 minutes, cover and leave to rise in the heat for 45 minutes.
In order for the dough to rise well, all the products in its composition must be at room temperature, including eggs and fat.

 

  • Prepare the filling by mixing the egg with the yoghurt and the shredded cheese. Stir well.
  • Divide the dough into 2 equal parts and roll each of them on a lightly floured surface to a thickness of about 1 centimeter.

 

When the dough is not very firm, it always sticks to the hands. A bottle of cold water helps to roll it easily.

 

  • Spread with melted butter, spread the filling and roll.
  • Cut into snails and arrange in a large pan covered with baking paper, leaving a small space between them.
  • Leave them to rise for about 15 minutes and spread with the beaten yolk.
  • Bake the meatballs in a preheated 180 degree oven for 20-25 minutes until golden brown. Do not overdo the baking, unless you like more toasted end results.
