How To Cook Homemade Cake With Mascarpone, Coconut And Raspberry Cream - Recipe

Required products :

For swamps :

  • 200 grams of unsalted butter, softened
  • 250 grams of powdered sugar
  • 4 eggs
  • 250 grams of sour cream at room temperature
  • the juice of 1 lemon, freshly squeezed and strained
  • 300 grams of self-swelling flour
  • 80 grams of coconut shavings

For cream :

  • 500 grams of mascarpone
  • 1 teaspoon vanilla paste
  • 250 grams of fresh raspberries

For the glaze :

  • 100 grams of unsalted butter, softened
  • 500 grams of cream cheese at room temperature
  • 240 grams of powdered sugar

For garnish :

  • fresh or dried raspberries

Method of preparation :

  • Preheat the oven to 160 degrees and cover with baking paper two round shapes with a diameter of about 18 centimeters.
  • In a large bowl, beat the butter and sugar with a mixer for 10 minutes.
  • Add the eggs one at a time, beating well after each addition.
  • Add the sour cream and lemon juice and beat until smooth.
  • Add the flour and coconut shavings and mix with a wooden spoon without overdoing it.
  • Distribute the mixture evenly in the prepared forms and level the surface with the back of the spoon.
  • Bake for 45 minutes or until a toothpick comes out clean from the center of the marsh.
  • Allow the tops to cool completely, during which time prepare the cream by mixing the mascarpone with the vanilla paste.
  • Cut each loaf in half horizontally, using a sharp knife or thread.
  • Place the first on a tray, spread it with 1/3 of the cream and sprinkle with 1/3 of the raspberries. Repeat with the remaining marshmallows, cream and raspberries.
  • Cool while preparing the glaze.
  • In a large bowl, beat the butter with a mixer until smooth.
  • Add the cream cheese and sugar and continue to beat for 6-8 minutes.
  • Spread the icing on the cake, garnish with fresh or dried raspberries and serve.
