How To Cook Homemade Cake With Peaches And Blackberries - Recipe

Required products :

For fruit topping :

  • 6 tablespoons / 85 grams / unsalted butter
  • 2/3 tea cup sugar
  • pinch of salt
  • 4 small nectarines, halved and pitted
  • 2 cups blackberries

For the cake batter :

  • 2 teaspoons flour for cakes
  • 1/2 cup corn flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 tea cup unsalted butter at room temperature
  • 1 1/4 tea cups sugar
  • 3 large eggs
  • 1 1/4 tea cups buttermilk
  • 2 teaspoons vanilla extract

For garnish :

  • whipped cream
  • vanilla ice cream

Method of preparation :

 

  • Preheat the oven to 180 degrees and cover the bottom of a 23/33 cm tray with baking paper. Grease with oil.
  • Mix the butter, sugar and salt in a saucepan over medium heat and stir until completely melted.
  • Pour the mixture into the prepared pan and tilt it on all sides to distribute over the entire bottom.
  • Cut the peaches into thin slices and arrange them on top without overlapping.
  • Spread the raspberries around them and set aside.
  • In a medium bowl, mix the two types of flour, baking powder, baking soda and salt.
  • In another bowl, beat the butter and sugar with a mixer for about 3-5 minutes until fluffy and smooth.
  • Add the eggs one at a time, beating for about 30 seconds after each addition.
  • Add the vanilla extract to the buttermilk and gradually add the mixture to the butter cream.
  • Gradually add the dry mixture, stirring with a wooden spoon or spatula.
  • Pour the cake batter over the fruit and tap the pan on the counter or table to release air bubbles.
  • Bake the cake for 40-50 minutes until golden brown or until the toothpick comes out clean from the center of the cake.
  • Allow to cool for 15 minutes before turning it over on a suitable tray.
  • Carefully remove the baking paper and cut into squares.
  • Serve the fruit cake warm, garnished with whipped cream or vanilla ice cream.
