Required products :

3/4 teaspoon (180 milliliters) high-fat liquid cream
1/2 teaspoon + 1/4 teaspoon sea salt
1/2 teaspoon (160 milliliters) corn syrup
1 teaspoon (200 grams) sugar
4 tbsp. ) oil at room temperature (cut into cubes)

Method of preparation :

Cover the bottom with foil and the walls of a rectangular cake pan (23 cm) and spray with grease.
Mix the cream with 2 tablespoons of butter, add 1/2 teaspoon of salt and vanilla paste, put the dish on medium heat and let the combination boil. Once this is done, remove from the heat and close with a lid.
In a suitable thin-walled saucepan, heat the syrup together with the sugar, stirring constantly. When the mixture becomes homogeneous and the sweet crystals are completely moistened, stir sparingly, only if necessary, so as not to harden the mass. The temperature should reach 155 degrees.
Then remove the pan from the heat and add the cream with the butter to the sweet mixture. Return to the heat and cook, stirring constantly, until the temperature reaches 127 degrees. Remove from the heat, add the remaining 2 tablespoons of oil and stir. Transfer to the prepared form, and 10 minutes later sprinkle the surface with salt. Allow to cool completely. Then, using a sharp knife, cut into squares, diamonds or other shapes.

 

The candies are ready. Store them in a container that closes tightly.
