Required products :
220-230 grams of raw hazelnuts
700 milliliters of rum, cognac or vodka
1 stick of vanilla
3 tablespoons of cocoa powder
300-320 grams of sugar
150-160 milliliters of water
1/8 teaspoon almond extract - optional
1 1/2 teaspoon vegetable glycerin
Method of preparation :
Bake the hazelnuts for about 12 minutes in the oven at a temperature of 200 degrees. Let cool, wipe with a towel and grind coarsely.
Put them in a jar with the vanilla stick and pour rum, cognac or use vodka. Close the container tightly and let the liquid stand for 1 to 4 weeks in a dark and cool place.
Then strain. The nuts will have absorbed alcohol, so press to extract the extract, which you mix with the liquid. Add the cocoa, mix well, close with a lid and leave in the dark and cool for another 1-2 weeks.
It's time to strain the drink with a coffee filter or something else suitable for the purpose. You should get about 470-500 milliliters.
Boil the syrup from the water and sugar, let it cool and pour it over the cocoa liquid, add the almond extract and glycerin.
The liqueur needs to stand for at least 1 month before consuming.
