Required products :

4 liters of fresh goat's milk

4 tablespoons vinegar essence 70%

1 teaspoon salt

spices of your choice and taste

Method of preparation :

Pour the milk into a saucepan, place on the stove and heat (it should not boil). Remove from the heat and add 4 tablespoons of vinegar (1 tablespoon per liter of milk). Stir gently and when the milk has crossed, strain it and pour it into a gauze bag. Once the whey is drained, put the mass in a suitable bowl, add 1 teaspoon of salt and spices of your choice and taste. Stir and pour the cheese into gauze (2 layers). Wrap tightly and tightly, tie, press with some weight and put in the refrigerator overnight.

About 600 grams of cheese are obtained from 4 liters of milk.
