Required products :

500 milliliters of cream with a fat content of 25 - 30%

30 milliliters of lemon juice

Method of preparation :

Heat the cream in a water bath over low or medium heat (up to 80 degrees, about 15 minutes). Then transfer the cream to the prepared gauze (several layers), placed in a suitable container to drain the mixture. Cover with plastic wrap and refrigerate overnight or 24 hours. Do not squeeze the gauze and do not squeeze, the liquid should drain itself.
