Probably many of you are worried about eating raw eggs and therefore avoid homemade mayonnaise, which is actually very tasty. There is an option in which you can eliminate the danger of raw eggs and still enjoy the rich taste of homemade sauce.

Required products :

  • 2 egg yolks
  • 2 tablespoons lemon juice and water
  • 1/2 teaspoon sugar
  • 1 teaspoon mustard powder
  • 1 teaspoon salt
  • 1 teaspoon oil of your choice

Method of preparation :

Put the egg yolks, lemon juice, water and sugar in a small saucepan on a very low heat and stir constantly.

At the first sign of thickening, remove the pan from the heat and continue stirring. Dip the bottom of the pan into a large bowl of cold water to stop cooking.

Pour the contents into a food processor or blender and wait 5 minutes to cool.

Add the mustard and salt. Blend on low and start adding the fat in a thin stream.

Transfer the finished sauce to a jar and store for up to 7 days in the refrigerator.
