Required products :

  • 1 head of garlic
  • 2 egg yolks at room temperature
  • 2 tablespoons red wine vinegar
  • pinch of salt
  • 100 milliliters of olive oil
  • 100 milliliters of oil
  • salt and pepper

Method of preparation :

  • Preheat the oven to 200 degrees and wrap the garlic head with aluminum foil.
  • Bake for 30 minutes, remove the foil and allow the garlic to cool.
  • In a deep glass jar, mix the olive oil with the oil.
  • In a small bowl, beat the egg yolks with the vinegar and salt.
  • Add 1 tablespoon of the egg mixture to the jar and mash briefly. Repeat with the remaining amount, keeping the proportion to a thick and smooth cream.
  • Peel the roasted garlic and add the cloves to the jar. Strain again.
  • Season the garlic mayonnaise with salt and freshly ground black pepper and mix well.
  • Transfer to an airtight container and store in the refrigerator.
