Required products :
- 2 tea cups peaches, cut into cubes and frozen
- 1/4 cup + 1 tablespoon coconut milk
For garnish :
- fresh peaches, cut into cubes
- fresh mint leaves
Method of preparation :
- Transfer the frozen peach cubes to a food processor or blender and mash for 4-5 minutes.
- Add the coconut milk and mash briefly enough to mix.
- Serve the ice cream immediately, garnished with fresh fruit and pieces of mint.
- Pour the rest into a suitable container and store in the freezer.
