Required products :

  • 2 kg of ripe red tomatoes
  • 2 pounds of sugar
  • 2 lemons, halved and freshly squeezed

Method of preparation :

  • Use a sharp knife to make a cross cut at the bottom of the tomatoes.
  • Immerse them in boiling water for about 20 seconds, then allow to cool.
  • Peel a squash, grate it and slice it. Transfer them to a large saucepan.
  • Add the lemon juice and squeezed halves and heat the mixture over medium heat.
  • Sprinkle with 1 cup of sugar, stir and cook for 10 minutes. Repeat with the remaining sugar, observing the proportion and time interval.
  • Puree the tomatoes with a blender and continue cooking until the mixture simmers and thickens. Stir often so as not to burn.
  • Remove the lemon halves and distribute the jam in clean glass jars.
  • Close them tightly and turn them upside down until cool.
  • Serve the tomato jam on a slice with butter, pancakes, muffins or anything else to taste.
