How To Cook Homemade Rye Bread With Wheat Bran And Onion - Recipe

Required products :

500 grams of rye flour
250 grams of wheat flour with bran
50 grams of fresh yeast
1/2 teaspoon sugar
500-600 milliliters of water
4 teaspoons salt
1 teaspoon coarsely ground black pepper
1 teaspoon ground coriander
4 onions
vegetable oil for frying

Method of preparation :

Dissolve the sugar in a glass of warm water, add the crushed yeast, and let the combination stand for 10 minutes.
In a large bowl, mix the sifted rye flour with the wheat, add the salt, pepper, and coriander. Then pour the yeast, the remaining warm water and knead until you get an elastic dough. For this purpose, it is good to use a mixer with a dough nozzle.

When it is ready, shape it into a ball, smear its surface with water, and place it in a warm place (at 35 degrees).

Cut the onion thinly and fry it in oil until it acquires a deep brownish color. Remove on paper to drain off excess fat.

Sprinkle the worktop with flour and knead the dough on it once more, adding the fried onions. Divide into 4 parts, which you shape as you prefer (oval, like a loaf or otherwise). Leave them warm for 30 minutes to rise, cover with a towel.

Make shapes or simple cuts on the surface of each of the loaves with a knife. Let the dough rise once more for about 20 minutes. Spray with water and bake in the oven on the middle level of the rack at a temperature of 250 degrees for 10 minutes. Then reduce the temperature to 200 degrees and let the bread cook for another 30 minutes (until ready).

Remove the hot ready-made bread on a wire rack, spray with water and cover with a towel for a while.
