Required products :

  • 2 kilograms of boned pork shoulder / cut into pieces 2-3 cm in size /
  • 30 grams of kosher salt
  • 1 tablespoon fennel seeds, toasted
  • 1 tablespoon freshly ground black pepper
  • 2 teaspoons hot red pepper
  • 2 teaspoons paprika
  • 1 teaspoon smoked paprika
  • 1 teaspoon red hot pepper flakes, ground or finely chopped
  • 2 tablespoons finely grated garlic
  • 3 tablespoons red dry wine
  • 2 pig intestines / or more if necessary /

Method of preparation :

  • In a suitable bowl, mix the meat with the garlic, spices and wine. Stir well to taste the evenly chopped pork, cover with foil and leave in the fridge overnight.
  • The next day, remove the mixture and grind it using the large attachment of the machine. If you do not have one at home, chop the meat with a knife.
  • Place the intestines in a large bowl under cold running water for about 2 minutes to soften. Wash them thoroughly, being careful not to get tangled.
  • Fill the sausages and tie the ends with clean cotton thread.
  • Smoke, dry, bake or freeze - the choice is entirely yours.
  • Serve with a glass of red wine.
