Boil water in a saucepan and fill a large bowl of cold water with ice cubes. Cut the spinach and put it in boiling water for 15-30 seconds. Using a slotted spoon, take it out of the pot and transfer it to the ice water. When cool, drain the excess liquid and blend until smooth.
Pour the flour on a cleaned kitchen counter and make a well in its center. Put the yolks and the whole egg in it, add the spinach puree and salt. Using a fork, beat the products, gradually adding a small amount of flour. Knead a soft sticky dough.
Use a spatula to clean the remaining dough from your hands and the hob. Add more flour until you make a dry dough, but you still need to keep it elastic. If the dough is still wet, add 1 teaspoon of flour until you get the required consistency. If it is too dry, use a spray bottle to gradually add water.
Wrap the dough in cling film and let it stand for 30 minutes on the hob.
Then cut it into 4 equal parts. Take one and wrap the other three in foil again.
Roll it out on a floured surface, the layer should be 1 cm thick. Pass the dough three times through a pasta machine with a pasta attachment, using the widest setting.
Place the dough on a floured surface and fold in 4, roll out and run through the machine again for 3 more times.
Reduce the thickness by 1 degree and repeat the last two steps again, then reduce the opening of the machine by another degree and roll to the desired thickness by changing the machine settings.
Transfer the rolled dough to a well floured surface, sprinkle with flour on top and cover with parchment paper. Wrap it in a towel to prevent it from drying out and repeat the steps with the rest of the dough.
Cut the dough with the desired attachment from the pasta machine or use a knife.
Divide the chopped pasta, sprinkle it generously with flour and roll into nests. Place on a paper-lined tray and cover with a towel until you decide to cook it.
The paste can be frozen and stored in the freezer for up to 3 weeks, and before cooking it should be left to cool gradually in the refrigerator.
When you decide to cook, put salt in boiling water and add the pasta, stir with a fork and bring to a boil, checking the readiness in 1.5 - 2 minutes. Strain, add sauce and serve.
