How To Cook Homemade Spring Mayonnaise With Radish Leaves And Olive Oil - Recipe

Required products :

  • connection radishes
  • 3 egg yolks
  • 1 teaspoon olive oil (cold pressed)
  • juice of half a lemon
  • 1/2 teaspoon spicy mustard
  • left

 

Method of preparation :

From the connection radishes use only the leaves. Wash them, then scald in salted water for 1-2 minutes.

Drain the liquid with a colander and chop finely.

Beat the yolks with the mustard and lemon juice, add salt to taste and gradually add olive oil, pouring it in a thin stream. Don't stop breaking.

When the sauce thickens, add the radish leaves and mix thoroughly.

Cool the finished mayonnaise, which is a wonderful addition to vegetable salads. You can also serve as a sauce with a garnish of raw vegetables.
