Required products :

  • 3 carrots
  • 1/2 red onion
  • 1/2 head garlic
  • 6 stalks of green onions
  • 4 stalks of celery
  • 4 cloves garlic, mashed
  • a handful of fresh parsley
  • a handful of fresh basil
  • 1 tablespoon peppercorn mix / black, white, green, pink /

Method of preparation :

  • Wash the vegetables thoroughly and cut them into large pieces.
  • Transfer them to a large saucepan, then add the fresh herbs and peppercorns.
  • Fill the pot with enough water to cover the vegetables. The less water there is, the more concentrated the broth will be.
  • Heat over medium heat until boiling and reduce the heat.
  • Let the vegetables simmer for 1 hour, stirring occasionally.
  • Remove from the heat and strain carefully.
  • Allow the vegetable broth to cool to room temperature, distribute in suitable containers and store in the refrigerator. If you don't use it right away, of course.
