About the yeast:

  • 1/2 teaspoon water
  • 1/2 teaspoon sugar
  • 1/2 teaspoon flour

For the dough:

  • 300 grams of yeast
  • 30 grams of salt
  • 1 kg of flour
  • 150 milliliters of water
  • 20 grams of sugar


Method of preparation :

Mix equal parts water, sugar and flour, leave the combination for 16 hours in an airtight bowl at a temperature of about 20-25 degrees. For 4 days every 16 hours add equal amounts of water, sugar, flour and stir. Store the finished yeast at a temperature of 5 degrees. Under these conditions, the yeast "sleeps" and comes to life when they enter a room with a higher temperature.

When you have the yeast ready, move on to kneading the bread dough. Combine the ingredients indicated for making it, stirring without intense movements. Leave for 2 hours in a tightly closed container.

Take a form suitable for bread and sprinkle it tightly with flour. Divide the dough into equal parts, which you arrange in the bowl. Wait for it to rise in a warm place (for about 30-40 minutes), then abruptly and with quick movements transfer the dough from the form into a pan. Make a few incisions at the edges and bake in a preheated oven (260 degrees).

When 12 minutes have passed from the moment you put the dough in the oven, place a bowl of water under the pan, reduce the temperature to 200 and bake until done (another 15-20 minutes).
