Necessary products:

 

  • 2 liters of fresh milk
  • 400 ml salt-free confectionery cream with a fat content of at least 30%
  • 3-4 eggs
  • 1 tablespoon salt

 

Method of preparation:

Mix the milk with the salt and bring to a boil. Meanwhile, beat the eggs mixed with the cream. Pour the mixture over the already boiled milk and stir constantly. Turn off the heat and continue stirring until a curd-like consistency is obtained. Pour into a strainer or gauze folded in several parts. Allow the cheese to drain for at least 3-4 hours. If desired, you can press with a weight to get the shape. After draining, add a little more salt and store in a cool place. The resulting cheese is ideal for salads as well as for direct consumption.
