How To Cook Honey Biscuits With Lemon Cream And Icing - Recipe

Necessary products:

 

  • 226 grams of unsalted butter
  • 50 grams of powdered sugar
  • grated rind of two lemons
  • 2 tablespoons honey
  • 2 eggs
  • 360 grams of flour
  • pinch of salt
  • 1/2 teaspoon gelatin

 

for the lemon cream

 

  • 100 milliliters of lemon juice
  • 135 grams of powdered sugar
  • pinch of salt
  • 5 egg yolks
  • 80 grams of soft butter

 

for the butter cream

 

  • 90 grams of soft unsalted butter
  • 95 grams of powdered sugar
  • 2 tablespoons fresh milk

 

for the glaze

 

  • 125 grams of powdered sugar
  • 4 tablespoons lemon juice

 

Method of preparation:

 

In a bowl, mix the butter, sugar, honey and lemon zest. Add the eggs one at a time, stirring after each. Sift the flour mixed with gelatin and salt, mix and prepare the dough.

 

Cool it, preheat the oven to 180 degrees and cover the pan with a sheet of baking paper. Roll out the dough and cut with a floral shape equal in number of figures. Cut a small circle in the middle of half of them and arrange.

 

Bake the sweets for 13-15 minutes and cool. Pour water into a saucepan, and in a metal bowl beat the yolks with the butter, powdered sugar, salt and lemon juice. Stir the cream in a water bath until it thickens and set aside.

In a bowl, mix the butter with the sugar, milk and beat until you get a butter cream. Prepare the icing for the sweets by combining powdered sugar with lemon juice. Coat the top of the biscuits with the resulting white icing and wait for it to dry.

 

Put a spoonful of butter cream on the whole biscuit parts and garnish with lemon. Carefully glue the sweets and arrange on a plate.
