Necessary products

For swamps:

  • 1 tsp brown sugar
  • 1 tsp honey
  • 250 g butter
  • 4 tsp wheat flour
  • 4 tsp spices (cinnamon, ginger, cloves)
  • 3 tablespoons cocoa powder
  • 1/4 tsp fresh milk
  • 1 tsp baking powder

 

For syrup:

  • 1/4 tsp water
  • 2 tbsp white sugar
  • 1 tbsp cognac

 

For topping, stuffing and sprinkling:

  • 500 g white chocolate
  • 400 g sour cream
  • 100 g white chocolate (crushed)
  • 300 g milk chocolate (crushed)
  • 1 tsp cherries / cherries in syrup (use only cherries / cherries)

 

Method of preparation:

Mix the brown sugar, honey and butter in a saucepan. Bring the mixture to a simmer, then turn off the heat and allow to cool. In a bowl, mix the flour, spices and cocoa, add the sweet butter mixture, milk and baking powder. Stir well. Pour the dough into a rectangular shape measuring 20 x 30 cm, greased with butter and sprinkled with flour. Bake in a preheated 180 degree oven for about 35 minutes (check readiness with a toothpick). When the marsh cools, take it out of the mold and cut into thin pieces.

Make the syrup by mixing the water and white sugar. Allow the stove to boil until thickened, then turn off and add the cognac.

It's time for the stuffing. Melt 500 g of white chocolate in a water bath, leave it to cool and add 200 ml of cream.

For the topping: Melt the milk chocolate in a water bath, when it cools, add the remaining cream.

In the bowl in which you will serve the cake, start "assembling" it, alternating a layer of honey cake dipped in the syrup, the remaining crushed white chocolate and the chopped cherries. Sprinkle with crushed milk chocolate on top and decorate with melted white. Wrap in plastic wrap and refrigerate for at least 2 hours before serving.
