Required products :

  • 2 sheets of rice paper (edible)
  • 1 teaspoon crystal sugar
  • 1/2 teaspoon honey
  • 1 teaspoon glucose syrup
  • 2 proteins
  • 1 teaspoon vanilla extract
  • 1 1/4 teaspoon pistachios
  • 1/2 cup coconut shavings
  • 1 1/2 teaspoons dried cranberries

Method of preparation :

In a rectangular tray measuring 18 by 28 centimeters, place a sheet of aluminum foil so that it covers the walls of the dish. Place one sheet of rice paper on the bottom.

Put the sugar, honey and glucose syrup in a small saucepan. Put on low heat and stir for 5-7 minutes until the sugar crystals dissolve. Increase the temperature and wait for the mixture to begin to boil. Leave on the hob without stirring until the mixture reaches 155 degrees (use a thermometer). Remove from the heat.

Beat the egg whites until stiff peaks with a mixer, then add the honey mixture in a thin stream. Continue beating until the mixture has cooled (about 5 minutes). Add the vanilla, pistachios, coconut shavings and blueberries. Stir.

Work quickly and spread the mixture in the prepared pan. Place the second sheet of rice paper on top and press with your hands to level the mixture and distribute it evenly.

Leave to cool completely, then cut into squares.
