Required products :

  • 200 grams of bulgur
  • 2 onions
  • 2 cloves garlic
  • olive oil
  • 3 zucchini
  • 200 grams of baby spinach
  • 2 eggs
  • 75 grams of cheese (feta or cow)
  • 1 lemon
  • 1/2 bunch mint (15 grams)
  • 1 overflowing teaspoon of harissa paste

Method of preparation :

Turn the oven to 180 degrees. Boil the bulgur until ready, drain if there is excess water, and allow to dry completely (moisture will evaporate from the heat).

Peel and finely chop the onion and garlic. Fry them for 10 minutes in 1 teaspoon of olive oil,

Grate the zucchini, finely chop the baby spinach. Transfer to a pan and cook for 1-2 minutes until softened. Pour over the bulgur and allow the mixture to cool completely.

Beat the eggs, crush the cheese and add the grated lemon peel and citrus juice. Then add most of the mint and charisma. With wet hands, form 12 flat meatballs. Arrange in a greased pan and bake for 30 minutes until golden and crispy.

Serve sprinkled with mint leaves.
