Necessary products:

  • 300 grams of chicken
  • 1 teaspoon rice
  • 1 large carrot or 2 medium
  • 1 large onion
  • 1 whole head of garlic
  • spices: cumin, coriander seeds
  • 1/2 cup vegetable fat
  • 1 hot pepper
  • 3 teaspoons water

Method of preparation:

Wash the rice and soak it in salted water for 45 minutes, so it will absorb the water and cook faster. Cut onions (into semicircles) and carrots (into straws). Under no circumstances grate the carrots. The meat is cut into pieces.

Put the pan on the stove, pour the fat into it, add the onion and fry it until golden on high heat. Then put the meat, fry for 5 minutes, then add the carrots and continue to fry until they soften (another 5 minutes). Add 1/2 teaspoon of cumin (grind with your hands for a stronger flavor) and a little coriander seeds. Fill everything with boiling water, which is 1 cm above the contents of the vessel. In the middle put the head of garlic and hot pepper, salt.

Bring the dish to a boil and when this happens, reduce the temperature to almost a minimum. Close the pot with a lid and let everything simmer for about 20 minutes. Then drain the water from the rice and put a layer of it on the contents of the pot. It is very important not to mix it with rice. Flatten the rice surface and pour more boiling water (at least 1 cm above the rice). Sprinkle with crushed zira on top, salt. Increase the temperature and leave until the liquid evaporates. It is not necessary to close the container with a lid. Periodically check the readiness of the rice, it should not boil and the water should evaporate. When this happens, reduce the heat, cover with a lid and let the dish cook for another 20 minutes. Then remove the garlic and hot pepper and stir the pilaf gently, shaking,

Enjoy your meal!
