Scrambled eggs are quick and easy and are prepared in every home for breakfast, lunch and sometimes for dinner. A complete source of protein, eggs remain one of the most preferred and fast foods. However, their preparation has subtleties, although they are ordinary food. And if you want to have tender and creamy scrambled eggs instead of hard crumbly egg pieces, you need to follow some simple rules.
If the eggs you are cooking are hard and "rubbery", you are probably cooking them at too high a temperature.
Do not put whole eggs in the pan, first beat them well in a bowl and pour them into the cooking pot, heated to a low degree, covered with melted butter (or other fat). Although it is tempting to start stirring them immediately, you have to wait for the "omelette" to start baking lightly at the edges, then carefully start moving the eggs to the middle of the pan.
Do not stir vigorously, but gently push them towards the center and tilt the pan in the opposite direction to return the uncooked eggs. Repeat these movements until the eggs are creamy and almost done. Take them out on a plate before they are fully cooked, because they are still cooking.
An important rule is to keep the stove always low, do not be tempted to increase the temperature.
