Learn how to cook "How to make homemade extracts for pastries and desserts". Delicious recipe.

It often happens that one or another dessert, in order to reveal the taste completely, lacks a very small detail - 1-2 drops of essence or extract. When we do not have the opportunity to buy any fragrance, we can prepare it at home. It seems complicated, but only at first glance. It takes more time to "soak" the product to give us all its flavor and aroma.

Rosewater

Suitable are fresh rose petals (homemade, not kupeshki) and dried tea rose buds. The less water you use, the more saturated essence you will get. Pour water into a small saucepan, bring to a boil and add the rose petals or buds. Turn off the stove, close the pan with a lid and leave for 1 night. In the morning, strain the water, pour it into small bottles, close them tightly and store in the refrigerator.

Is an extract of green lemon (lemon, orange)

Remove the rind of a lemon as thin as possible, being careful not to get caught by the white bitter part. Put it in a jar and fill with 50 ml of water and 50 ml of vodka. Put in a dry and cool place for 1 week. Then strain and you can use as intended.

Berry extract

To prepare it you need 500 grams of strawberries. Clean them from the tails, cut into thin plates. Put in a small saucepan, pour 1 cup water and 1/2 cup sugar. Bring to a simmer and cook for 30 minutes. Then strain the strawberries with gauze. Pour the resulting liquid back into the pan and let it boil over low heat until it thickens to a syrup. Allow to cool and refrigerate.

Mint extract

Carefully wash and dry the mint leaves (about 1/4 cup), cut them and put in a jar. Pour 100 grams of vodka and 100 grams of water, close the container and shake several times. Leave on for 3 weeks, shaking periodically. Strain before use.
