60 milliliters lemon juice
medical gauze, folded in 3-4 parts

 

Method of preparation:

 

In a bowl, mix the cream and lemon, beat until stiff. Cover the colander with gauze, pour the mixture, wrap on all sides and place in a larger bowl to drain.

 

Cover with cling film to preserve both the taste and the qualities of the product. Patiently wait a day, unfold the gauze and pour the mixture into a box with a lid. Store in a cool place. The cream is suitable for cakes as well as for seasoning pasta and other dishes.
