  • Beat the egg whites with a mixer, gradually increasing the speed - the thicker they are, the more puffy the souffle will be.

The whites are sufficiently broken when the mixer stirrers begin to form hard peaks after lifting them up. When you turn the bowl upside down, the egg whites should stay in it - be careful with this exercise :) When adding them to the main mixture, in no case should you beat with a mixer. It is recommended to do it gradually, using a wooden spatula or spoon. Make movements from the bottom up and turn the bowl clockwise.

Do not open the oven during baking !


Never, ever, ever open the oven for the first 15 minutes of baking the souffle. If you do, it will drop due to the sharp change in temperature. You need to preheat the oven properly, according to the specific recipe, to minimize temperature changes. Bake on a water bath and moderate heat.

Everyone has their own trick to making the perfect souffle. Here are some of the most effective:

  • After filling 3/4 of the souffle cup, run a wet knife along the walls to make it swell better.
  • Add 1 tablespoon of cornflour to the beaten egg whites.
