If you like the slightly smoky aroma and taste of carrots, prepare hummus with carrots and almonds. Serve with vegetables or toasted slices or crackers.

Required products :

  • 1/2 cup almonds
  • 500 grams of carrots, peeled
  • 2 tablespoons + 1/2 teaspoon olive oil
  • 2 1/2 teaspoons salt
  • 2 cloves garlic
  • 1/2 cup canned chickpeas
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon black pepper
  • 3/4 teaspoon hot smoked pepper
  • 1/2 teaspoon parsley, finely chopped

Method of preparation :

Turn the oven to 180 degrees. Roast the almonds for 8-10 minutes until they release their aroma. Cool them.

Cut the carrots into large sticks. Put them in a tray lined with paper, pour 2 tablespoons of olive oil and salt. Bake for about 1 hour, stirring 1-2 times. Therefore, carrots should turn slightly brown over time, but should not burn.

Transfer them to a blender, add the garlic, chickpeas, lemon juice, pepper, smoked paprika, parsley, half a cup of olive oil, salt and almonds. Grind to a homogeneous mixture until the consistency of hummus.

Taste and add lemon juice and / or salt if needed.

Transfer the dip to a small bowl, pour in more olive oil and sprinkle with parsley.

You can cover the container and store it in the refrigerator for up to a week.
