How To Cook Hummus With Fresh Cucumbers And Green Spices - Recipe

Required products :

1 gherkin (or 1/2 cucumber)
400 grams boiled chickpeas
1-2 sprigs of dill
1-2 sprigs of fresh coriander / parsley
1/2 lemon
1 stalk celery
pinch ground coriander
pinch of dried basil
40 grams of white walnut sauce
60 milliliters of olive oil
100 milliliters of water
salt and ground black pepper to taste

 


Preparation :
Pour the water into the bowl with the cooked chickpeas and beat with a blender until you get a uniform consistency, resembling thick cream.

 
Cut the cucumber into small cubes.

 
Separate 2-3 coriander/parsley leaves for decoration, and chop the rest together with the dill and celery.

 
Add the green and dry spices and mix everything.

 
Pour olive oil, finely chopped peel of 1/2 lemon, juice of 1/4 citrus, walnut sauce, salt and pepper to taste. Stir thoroughly again.

 
Transfer the finished chickpeas to a saucepan or other suitable container, make a dent in its surface (in the middle) and place the cucumber in it.

 
Garnish with the reserved petals, sprinkle with lemon juice and serve the hummus cooled with a slice of lemon.
