First, make a few balls of melon using an ice cream spoon.
Grind the vanilla rusks in a blender. When they turn into fine crumbs, add the softened butter to them and grind.
Melt the chocolate in a water bath, wait for it to cool and then pour the cognac. Pour the mixture over the rusks with the butter and make a dough, which you put in the fridge for an hour.
Using a blender, puree the melon, whip the cream separately, pouring the condensed milk into it. The cream is ready.
Use a detachable cake tin with a diameter of 22 centimeters. Cover the bottom with a sheet of parchment and pour the finished dough. Part of it should cover the walls of the vessel (1.5-2 centimeters).
Apply cream on this base, cover with cling film and put in the freezer for 4-5 hours.
When you take out the iced dessert, remove the ring from the dish and cut the cake with a hot knife.
Before serving, garnish with melon balls, coconut shavings and mint leaves.
