Ice cream pie is an ideal dessert after a big holiday dinner, because it can be prepared a few days in advance and taken out of the freezer just before serving. It is also very easy to prepare.

Method of preparation :
Preheat oven to 160 degrees. Grease the bottom and walls of a round pan and sprinkle with flour.

Grind to a fine hard almond biscuits and sugar. Add 4 tablespoons (or more if needed) of butter until the mixture is homogenous. Spread the mixture evenly in the pan and press on the bottom to form a thin tray. Bake the base for 12-14 minutes or until lightly browned, remove from the oven and allow to cool completely.
filling and topping :
In a large bowl, mash the ice cream and mix with the crushed chocolate and caramel. Carefully pour the ice cream mixture on the cooled base and smooth with a rubber spatula. Freeze for at least 2 hours, then pour a thin layer of chocolate ganache on the cake and garnish with toasted sliced almonds. Freeze the pie again for at least 2 hours to set. Leave the pie for 5-10 minutes at room temperature before serving, then cut into pieces and serve.
