How To Cook Ice Cream With Strawberries And Raspberry Kiss - Recipe

Required products :

for ice cream:

  • 450 grams of berries
  • 150 grams of sugar
  • 350 milliliters of whole milk
  • 150 milliliters of confectionery cream
  • 30 grams of glucose
  • 50 grams of milk powder

for the kiss:
3 proteins

  • 1/2 teaspoon lemon juice
  • 100 grams of sugar crystals
  • 50 grams of powdered sugar, sifted
  • 2 teaspoons ground dried raspberries

for serving:

  • 200 grams of raspberries
  • 1 teaspoon powdered sugar
  • understands full-fat cream for decorating

Method of preparation :

Sprinkle the strawberries with sugar and leave them at room temperature for 1 hour, stirring occasionally.

Meanwhile, heat the milk, cream and glucose in a saucepan. When the liquid boils, stir in the milk powder and allow to cool to room temperature.

Put the milk mix in a blender, add the strawberries and beat until smooth. Transfer to an ice cream machine, turn on and after it freezes, transfer to a container and freeze for 2 hours.

If you do not have an ice cream machine, put it directly in the freezer, stirring occasionally until the ice cream starts to harden, then leave for 2 hours.

Line a baking tray with parchment paper.

Beat the egg whites with the lemon juice, when you get soft tops, start gradually adding the sugar. Once all the sugar has been absorbed by the egg whites, beat for another 2 minutes until you get a shiny mixture, add the powdered sugar at the end and stir for the last time.

Using a spatula, transfer the kissing mixture to the pan and flatten. Sprinkle with ground raspberries and bake for 2 hours at 100 degrees. When the kissing cake is ready, leave to cool, then crush.

Mix the raspberries with the powdered sugar and leave for 20 minutes.

Serve - put ice cream on the bottom of a glass, add a little whipped cream on top, decorate with raspberries and kisses.
