Necessary products:

  • 1 cup wholemeal flour
  • 1 teaspoon white flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons olive oil or canola oil
  • 3/4 tea cups low-fat milk

Method of preparation:

In a bowl, mix the wholemeal and white flour, salt, baking powder and baking soda.

Stir in a separate bowl the olive oil and milk and heat in the microwave.

Make a well in the center of the dry ingredients and add the liquid in a thin stream, stirring and kneading by hand. Form the dough into a ball and put in a bowl, cover with a lid and leave for 20 minutes.

Divide the dough into 4 balls, cover with foil and let stand for 10 minutes, then roll them out on a floured
surface so that they look like thin cakes.

Heat a non-stick skillet over medium heat. Bake the rolled loaves and cover with a lid. When bubbles appear on the surface of the dough, turn and bake on the other side.

Serve with stew or other dish, sprinkling with fresh parsley if desired.
