Required products :

  • 210 grams of flour
  • 100 grams of semolina flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons ghee
  • 120 milliliters of water

for spreading paste:

  • 2 tablespoons melted ghee
  • 3 tablespoons rice flour
  • frying oil

Method of preparation :

Put the flour, salt and pepper in a bowl. Pour ghee and stir with your hands. Slowly pour in the water, kneading constantly with your hands to form a dough that is not sticky. Cover with a bowl when done and leave for 1 hour at room temperature.

Prepare the spreading paste by mixing the products in a small bowl.

Start shaping the apprentices.

Divide the dough into two parts, each of which put in a separate bowl covered with foil.

With your hands, tear off small pieces of dough (50 grams each) and shape them into balls.

Roll them thinly (about 2-3 millimeters) on a floured surface, and place the resulting trays under a towel so that they do not dry out. Thus make 5 pieces.

Take one crust, spread it with the paste and put a second one on top. So, while you arrange all 5, spread each one.

Roll into a roll and cut into 1 cm pieces with a sharp knife.

Roll them out to a thickness of about 8-10 centimeters.

Do the same with the whole dough.

Heat the fat in a deep frying pan (at least 2-3 cm deep) and fry the cherries one by one until golden - about 4 minutes per side.

Drain on paper and serve warm or at room temperature.
