Required products :

  • 2 1/2 tablespoons ghee
  • 2 teaspoons cumin seeds
  • 2-3 dried hot peppers
  • 18 leaves of fresh curry leaves
  • 1 large onion, finely chopped
  • 5 crushed garlic cloves
  • 4 cm ginger root, grated
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 large tomato, finely chopped
  • 200 grams of basmati rice, rinsed
  • 210 grams of red lentils
  • 2.5 liters of water
  • 100 grams of spinach, finely chopped
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons salt

Method of preparation :

Melt the ghee in a saucepan and add the cumin seeds and hot peppers. When they release the aroma, add the curry leaves, fry them for 30 seconds, stirring occasionally. Add onion until soft. Finally add the garlic ginger, two minutes later add the turmeric and garam masala. A minute later, add the tomatoes and cook for 3 minutes to soften.

Add the rice to the fragrant tomato mixture and pour the water. When it starts to simmer, pour the lentils and cook until it disintegrates, about 40 minutes.

Finally add the spinach, lemon juice and season with salt and pepper. Cook for 1-2 minutes, stirring occasionally. When the spinach is melted, serve the dish with a few curry leaves if desired.
