How To Cook Indian Stew Dahl With Chickpeas, Cauliflower And Spinach - Recipe

Necessary products:

  • 1 tablespoon olive oil
  • 1 tablespoon mustard seeds
  • 1 diced red onion
  • 3 cloves garlic, chopped
  • 1 tablespoon ginger root, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground coriander
  • 1/3 teaspoon paprika
  • 4 and 1/2 cups vegetable broth
  • 1 cup dried red lentils
  • 1 can of chickpeas, drained and rinsed
  • 2 teaspoons cauliflower
  • 2 teaspoons baby spinach
  • 1/4 tea cup fresh coriander
  • steamed rice or Naan Indian bread

Method of preparation:

Put a large saucepan over medium heat and add olive oil.

Wait for the fat to heat up and add the mustard seeds. Cook for 1 minute, stirring constantly.

Add onion, garlic, ginger and saute for 5 minutes. Add the turmeric, curry powder, coriander and paprika. Saute for 1 minute, then pour in the vegetable broth, lentils and chickpeas and stir to mix all the ingredients well. Bring to the boil, cover and reduce heat. Cook for about 20 minutes and add the cauliflower. Cover again and cook for another 8 minutes or until the cauliflower is soft, then pour in the spinach and stir. Cook until soft.

Serve sprinkled with fresh coriander and Indian Naan bread or steamed rice.
